After cooking for an hour and a half it was very watery so I blended some of it and I took the lid off and let it cook down for another 90 minutes. Mine looks very saucy whereas yours in the photos looks meatier. Add the onions, bell peppers, mushrooms and garlic and stir with a wooden spoon until the onions begin to turn translucent.

I added a couple ounces of grated asiago cheese, too. In fact, I sometimes make it a day ahead of time, let it sit in the fridge and then slowly bring it back to temperature the day of serving. It lasts us through the fall and winter! You never ever ever put oregano in marinara.. oregano makes it pizza sauce.

I did make some modifications. I also used 1/4 tsp onion powder for the onion, so I only needed about a TB of oil to cook the garlic.
Thank you for taking time to leave a comment! I served it with basil garlic shrimp over spinach pasta from this site. This is a fantastic recipe! Gluten Free Cooking shouldn’t be difficult, expensive, or tasteless. So I would omit the onions.
Leave the seeds in for heat or remove them for a milder pesto.
Oh shoot! For the pesto, I reduced the parmesan since I had added some asiago to the cream.
